{"id":51,"date":"2020-11-02T23:32:18","date_gmt":"2020-11-03T06:32:18","guid":{"rendered":"https:\/\/blogs.ubc.ca\/dpgm99\/?p=51"},"modified":"2020-11-02T23:32:18","modified_gmt":"2020-11-03T06:32:18","slug":"unit-4-reflections","status":"publish","type":"post","link":"https:\/\/blogs.ubc.ca\/dpgm99\/2020\/11\/02\/unit-4-reflections\/","title":{"rendered":"Unit 4 Reflections"},"content":{"rendered":"<p>The line that struck me the most from Chef\u2019s Table was when Enrique recalled the best advice he had gotten as \u201cyou have a responsibility as a Mexican cook to do Mexican food.\u201d Along the same lines, it was fascinating to see how Enrique transforms Mexican cuisine into fine dining, which generally carries a Eurocentric bias, and portrays staple ingredients in such refined and dignified fashion.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>I loved the juxtaposition between the scenes showing the traditional cooking process and the \u201cmechanized\u201d production at <i>Pujol. <\/i>It shows really well that all of Enrique\u2019s lavish creations carry at heart the ancestral Mexican teachings that unite families and generations continuously. This relationship also applies to other Latin American cultures, as we\u2019ve seen with the Garifuna Ereba making process. In particular I found the scene where Enrique is teaching his kids to make tortillas from scratch really special, as it reminded me of the times I\u2019d make arepas for breakfast with my mom, or when I\u2019d sneak out to my neighbor\u2019s apartment and help her make arepas for her daughters to take to work.<\/p>\n<p>Another thing I found really interesting was how Enrique described the creative process behind concocting a new dish, and the sudden feeling of growing tired of his own creations. I think it can be paralleled to Benson and Fischer\u2019s article in the sense that Enrique is always seeking that \u201calgo m\u00e1s\u201d through cuisine. As consumers, we too expect chefs at his level to innovate regularly and provide new exquisite experiences for our palates.
