{"id":151,"date":"2016-04-12T12:26:16","date_gmt":"2016-04-12T19:26:16","guid":{"rendered":"https:\/\/blogs.ubc.ca\/homecanning\/?p=151"},"modified":"2016-04-12T12:32:59","modified_gmt":"2016-04-12T19:32:59","slug":"canning-meats","status":"publish","type":"post","link":"https:\/\/blogs.ubc.ca\/homecanning\/2016\/04\/12\/canning-meats\/","title":{"rendered":"Canning meats"},"content":{"rendered":"<p>Mrs Andrea&#8217;s chapter on canning meats begins with a warning:<\/p>\n<blockquote><p>&#8220;In no kind of canning is it more important that each step in the process be carried out promptly than in canning meats.&#8221;<\/p><\/blockquote>\n<p>Returning to her conversational style, she suggests that &#8220;if you have a farmer friend find out when he is planning to market his cockerels and buy some.&#8221; Note here &#8212; &#8220;some&#8221; rather than a certain quantity or weight, and the assumption that one\u00a0<em>will<\/em> indeed have a farmer friend.<\/p>\n<p>Mrs Andrea&#8217;s scientific knowledge comes through here &#8212; she emphasizes the absolute importance of sterilizing meat and fish.<\/p>\n<blockquote><p>&#8220;It is so essential that it is better to over-sterilize than under-sterilize,&#8221; she writes.<\/p><\/blockquote>\n<p>The meats used in these recipes seem to me, strange specifics to be used for canning.
