- Basal rosette in first year. In second year, an upright stem is formed, from which branch out a number flower heads, with highly distinctive involucres of spiny bracts. Entire plant is a grey-green
- Named after Ellen Willmott, an English horticulturalist who is rumoured to have distributed Eryngium seeds in gardens she visited.
- Self-seeding. Full sun. Drought tolerant.
- An unusual looking plant. Attractive, but hostile. Adds a sculptural/architectural element to a mixed border. Great cut or dried flower.
