Today was the first day that my diet completely changed. It was just yesterday that I was biting into a nice juicy burger and finishing it off with a big scoop of ice cream for desert. How could I, of all people become vegan? I definitely wanted to try it out, as I’ve heard numerous claims that it promotes sustainability, uses less water than animal foods for production, and results in an amelioration of global hunger.
So I finally put it to the test. My diet today consisted of the following…
Breakfast: 1 banana and black tea, with multigrain toast and raspberry jam
Lunch: Lentils and rice with a mustard sauce on the side
Dinner: Pasta with tomato sauce and spinach (cooked with coconut oil)
Overall, it was quite easy being vegan today, however I understand that this was simply day 1 of 7. In terms of cooking, I found that my meals were prepared much faster and most of the ingredients I required were already found in my pantry. The only product I went out to buy was coconut oil; a substitute for dairy butter and I’ve truly fallen in love with it (I also discovered that it can me used for a multitude of other things such as makeup remover, moisturizer and as a throat lozenge).
Day 1 of 7 is so far off to a great start, and I have yet to experience and difficulty with this particular diet. Already, I felt more energized than the day before as I would constantly feel groggy during previous days.
