Well I’ve completed my second full day of veganism, and frankly it was not as easy as yesterday. I’ve come to realize that being vegan impacts your eating habits in a very significant way as it makes you ten times more aware of what you are putting into your body. Every product I am interested in buying requires a thorough analysis of the ingredients list, which is not something that I frequently did, prior to this transition. I’ve realized that so many food products contain some type of animal product and/or animal by-product, which is truly astounding as it made me quantify the amount of animals that are solely used for consumption in the world. Being vegan is remarkable, as you are making an indirect contribution to the demand and supply of livestock, which further maintains the global water reserve and grain products (that would have been given to animals as feed).
Aside from all these facts, let’s breakdown my diet of the day…

Breakfast: vegan blueberry oat bar with a cup of soy milk
Lunch: peanut butter on whole grain toast with vegan pumpkin pie for dessert
Dinner: home made vegan burrito bowl
It was definitely harder to find new vegan meals for today, hence why I decided to cook a simple meal (the burrito bowl) that I would have usually added cheese to. The creativity process is hard, but I believe once you fall into the regime, the substitutions should come easy.
Considering the fact that tomorrow night is Thanksgiving dinner, I’m not too sure how appetizing my meal will be. I’ll most likely be missing out on my favourite home-cooked mashed potatoes, but I’m sure I’ll be able to accommodate myself.
