Happy Thanksgiving! Tonight we had a beautiful dinner in the company of friends and family, as we celebrated each other and what we are grateful for. Thanksgiving was surely a challenge for my diet. It was quite obvious that I’d be missing out on the main event of the dinner, being the turkey, so my mom made the extra effort to make her mashed potatoes with almond milk and some dairy-free butter she purchased at Whole Foods. I was so surprised with how the mashed potatoes tasted because I really couldn’t tell the difference! It really opened up my eyes to the vegan lifestyle and how it’s able to be done without compromising taste and quality. Aside from the mashed potatoes, I had various vegetables such as yams, potatoes, broccoli, and green beans all draped in delicious cranberry sauce. Truth be told, I definitely was not full after my heaping plate of veggies and mashed potatoes, so I decided to leave the rest of the room I had left for some lovely vegan pumpkin pie from Aphrodite’s Cafe. Although I had 2 large slices of pie, I was adequately satisfied with my meal of the night, and was not as upset over my lack of turkey dinner as I thought I would be.
