I feel so energized today.

I woke up and I felt amazing. I haven’t had meat and dairy in five days and it feels exhilarating. My skin has improved, I’m less tired in the mornings, and my mood has significantly shifted. I learned new recipes yesterday from this online blog called ‘Oh She Glows’ and I was surprised at how easy everything is to make! This following was my menu of the day…

Breakfast: overnight oats smoothie with fruit
Lunch: greek orzo salad with tomato, peppers, olives and lemon juice
Dinner: creamy cashew Alfredo pasta with broccoli

The recipe for the Alfredo pasta I found today was AMAZING! Who knew cashews were a multipurpose food? I was so surprised with how creamy the pasta tasted, and how similar it tasted like real cheese! I was really craving something savoury today so this definitely did the trick for me. I feel like this meal in particular truly changed my perception of veganism today. If making my previous favourite non-vegan foods is this easy to veganize, I could get used to this! Is this why my mood improved so much today? Honestly who knows, but what I can assure you readers is that I have truly never felt better. It may be a hard diet, but I’m slowly realizing that’s it’s not as restrictive as I originally thought…
