WELCOME TO THE END OF THE ROAD.

I cannot believe I truly made it. 30+ bananas later, and lots of cashew dressing to substitute cheese, I have finally made it to the one week mark and I feel empowered above all else. All I want to do is share my feelings about veganism with everyone I know. I feel like I have knowledge that should be shared and emphasized. Where do I start? I want to tell everyone they can make an impact on hunger just by cutting out meat from their diet! In terms of moving forward, I must figure out how to achieve this… I don’t want to come across as overbearing but I do want further awareness to be raised. Menu follows…

Breakfast: avocado toast with chia seeds and fruit
Lunch: leftover greek orzo pasta salad
Dinner: veggie burger from MeeT in Gastown

As my final meal of this entire dietary journey, I decided to treat myself through praise and good food. The best place I know how? MeeT in Gastown. It was definitely one for the books as it was so incredibly delicious and sustainable overall. I was definintely impressed with how easy it is to eat vegan when dining out. I had previously packed a protein bar in my purse in case we were unable to find a restaurant that provided vegan options, but we were impressively corrected by seeing restaurant after restaurant with numerous vegan options. Especially in our society, what excuse do we have to not go vegan? I think I may have to continue with this particular diet forever… how am I supposed to go back to eating meat? I just don’t think that will happen.

Thanks for following me on my journey this week!
