Bigger planes will have more people, the service will not be as good as in small planes. Also, if you want bigger space, it will cost more.

We can’t choose the biggest planes because of costs. The ticket prices would need increase, and people might not want to pay those prices

Larger planes have larger mass using more fuel, the largest costs for airlines. Higher costs likely outweighs gained customer happiness.

Airlines would want to maximize the amount of passengers that they can fit into one plane = less room/person. Small planes also cost less.
