Rhubarb + Radish Salad

Ingredients:

  • 3 cups Rhubarb
  • ½ a Lime – Juiced
  • 1 cup Green Onion
  • 1 cup Chopped Tomatoes
  • ½ cup Radishes
  • 2 tbsp Rice Vinegar (add more to taste)
  • 1 tsp Sugar (to taste)
  • ½ tsp Salt
  • ½ tsp of Ground Pepper

Directions

Roughly chop the onion and the rhubarb (peeling the stalks if they are thick). Add all the ingredients (except for tomatoes) to a food processor and pulse several times until the vegetables are evenly sized

Hand dice the tomatoes  and stir into the final batch. Adjust seasonings with cilantro, lime, vinegar or salt.
