Cozy Fall Recipe

Hey NutriSocalites, here is a quick and easy breakfast recipe to keep you cozy with all the rain 🙂

Banapple Baked Oatmeal

Serves 1

  • 1/2 cup of rolled oats
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/3 cup almond milk (or any milk of your choice)
  • 1/2 large banana
  • 1/4 of an apple (I used Granny Smith, but your favorite kind will do!)
Add ins: a few pinches of cinnamon or pumpkin pie spice, a handful of any kind of nuts or dried fruit

Preheat the oven to 350 degrees Fahrenheit

Add oats and baking powder to a bowl and mix together.  In a separate bowl mash up 1/2 of your banana.  Once it is thoroughly mashed, mix in the milk and the vanilla.  Add the wet ingredients to the dry and mix until all the oats have been covered.  Grate the apple or chop it into bite sized pieces and incorporate into the oatmeal mixture.  Once everything is all mixed up, pour the mixture into a small ramekin.  Take the remaining banana and cut into pieces.  Place the pieces on top of the oatmeal.  Bake for 25-30 minutes or until the edges are golden brown.
