Date Energy Balls

Ingredients

  • 2 cups pitted Medjool dates
  • 1 cup whole raw cashews (or substitute for your nut of choice)
  • 1 cup shredded unsweetened coconut
  • 2 tbsp coconut oil
  • 1/2 cup dried cherries (or substitute your dried fruit of choice)
  • 3 tbsp dark chocolate chips
  • 1/4 cup peanut butter (or other nut/seed butter)
  • 2-3 tbsp cocoa powder (optional)
  • Seeds of your choice – chia, hemp, etc. (optional)

Directions

In a large food processor, process the nuts and coconut until crumbly. Add in the dates, peanut butter, and coconut oil and process again until a sticky, uniform batter is formed. Dried fruit, chocolate chips, and additional nuts can be added earlier on for a more uniform consistency, or pulsed in near the end depending on your preference! Scoop the dough, then roll between your hands to form balls. Roll finished balls in shredded coconut or cocoa powder. Place balls on a baking sheet lined with parchment paper, then place in the freezer to set for at least an hour before serving. Store the balls in a sealed container in the fridge for up to a week, or in the freezer for an even longer shelf life.

This recipe is very easily adaptable! Try any combinations of nuts and dried fruit to switch things up. Some of our favorites:

  1. Blueberry cashew
  2. Cherry almond
  3. Cranberry pistachio
  4. Chocolate pecan
