Well, sort of chewy, like what you’d get if you crossed a prawn, a mushroom and an eraser. (They squeak.)
The algae-looking sauce isn’t garlic. It’s kind of briny but not bad if you dip crusty bread in it afterward. I don’t know what’s in it, because the menu was in French.
