One of my greatest joys out of life is hosting everyone over at my house. There’s no better feeling than to be able to gather people under the same roof and enjoy each other’s company over good food and laughter. For today’s blog, I’ll share some of tricks and tips on how to bring your Sunday morning brunch to the next level.

Most of the preparation can be done the night before. You want to avoid doing as much as possible on the morning of. The most you should be doing the morning of your brunch is assembling your spread. Some of the things that can be done ahead of time is pouring your juices in carafes (I got mine from IKEA) and putting them in the fridge to chill overnight. This way in the morning, your mimosa bar is all ready to go. Pro tip: make cute labels for your carafes.

Make your guests feel at home and extra special by preparing a yummy fruit infused water. These glass dispensers come in so handy in all occasions! Cut up pineapples into small cubes, and an orange and a lemon in slices. Infused them in water overnight for all the flavors to come together. In the morning, add some fresh mint for added flavor to your infused water (this is optional).

While you’re at it, wash your fruits for your mimosa bar the night before so that your fruits have time to dry. Pro tip: serve your fruits in white bowls so that the colors really pop!

Now that all the prep is done, it’s time to make our spread. If I’m preparing a brunch for just my husband and myself, I like to raid my fridge and see what I can use. Spreads can be anything in your fridge from leftover pizza, to granola cups. For this particular spring morning, I decided to do a combo of both. I had a baguette and when I saw the cherry tomatoes, I knew I had to make these amazing, yet super easy bruschetta.

To make these bruschetta, all you need is a baguette, and some in season rustic cherry tomatoes. The seasonal cherry tomatoes ones are really sweet, these are the ones you want to keep an eye out for. I’m not a huge fan of tomatoes, but I can get on board with these! If you’re able to find the colorful ones, get those! They add a lot of contrast for when you assemble everything.

Cut up your baguette in slices. Coat your baking with some olive oil. Lay the slices on a baking pan and spread some more olive oil over them. Preheat your oven to 350F. Put in your baking pan, and watch the slices. I usually eyeball this, but toast them for about 6 minutes, or until it’s a light golden brown.

The bruschetta include:

  • 2 ½ tablespoons of minced roasted garlic
  • 2-3 cup chopped tomato
  • 1 tablespoon of basil
  • Salt & pepper to taste- 3 tablespoons of balsamic vinegar

Mix all the ingredients together. Once your baguette edges are crispy, take them out of the oven and serve them with the bruschetta. You can either serve the bruschetta on the side, or have it assembled for your guests. Pro tip: prepare the bruschetta overnight for the flavors to come together.

Once everything is done, you’re ready for your very own at home brunch. Put on some jazz in the background and enjoy each other’s company over some yummy mimosas and bruschetta!

Happy brunchin’!
